tofu-puraZnanstvenici sa Sveučilišta u Missouriju stvorili su zamjenu za piletinu u obliku soje koja izgledom i okusom iznimno podsjeća na "pravu stvar". Osim toga, nudi i zdravstvene dobrobiti, poput snižavanja kolesterola i održavanja kostiju zdravima. Fu-Hung Hsieh, voditelj je projekta koji za cilj ima stvoriti jeftinu biljnu zamjenu za piletinu. Umjesto uobičajenog dodavanja boje i okusa soji, Hsieh je razvio proces koji soji omogućava stvaranje vlaknaste strukture kakvu nalazimo u pilećim prsima.

Za započinjanje procesa, Hsieh koristi sojine proteine ekstrahirane iz sojina brašna. Soja potom prolazi kroz proces kuhanja, uz korišenje vode, topline i tlaka. U konačnici, gotova mješavina sastojaka prolazi kroz cilindar, kao što je vidljivo u video prikazu.

Hsieh navodi kako je ova zamjena za piletinu različita od drugih zbog toga što se pri njenoj proizvodnji koristi viši postotak vlage, čak i do 75%. "Vlažnost je čimbenik koji našoj soji daje teksturu sličnu onoj kakvu nalazimo kod piletine."

Inače, soja sadrži vrijedne hranjive tvari, od kojih neke pomažu u održanju zdravih kostiju te preveniranju raka prostate, dojke i debelog crijeva. Soja je i izvrstan izvor masnih kiselina, a ne sadrži kolesterol.
